✨✨ French Cuisine at Les Papilles✨✨
其實星期六上完韓式唧花課之後,還有一個小小的餘韻,就是趁難得的晚間空檔,立即衝過銅鑼灣,相約了Jan老師來個氣氛比較Casual的法式fine dining。
法式甜點我常常周圍吃,但法國菜我真是很少特別去試。今次忽發其想,是因為某一日我們batch 2的同學聽收音機,發現當年教我們的助教先生”Pastry Jeff”接受訪問,原來他現在於銅鑼灣開了一間小小的法國餐廳!
想起當年他一個資深西廚剛從南法回來,便臨危受命調過來pastry stream頂替中途離開的助教小姐,真是有點大才小用。也幸好後半部份有友善的他幫忙,中和了嚴厲chef的可怕氣場,我們的日子才好過一點點。
得悉他現在出來自立門戶,當然要靜悄悄過來捧個場。
準時7點和Jan老師來到這間小店,熱情的店員立即過來招呼我們。訂座的時候已經說明,weekend只會提供spring tasting menu,所以我們要選的地方不太多,只需選擇一個前菜和一個主菜,非常適合我這個不想動腦筋的傢伙。
老實說我其實沒有細看menu,所以店員將一道又一道精緻的前菜送來,竟然不停有新驚喜出現。好像用芒果來配48months的Parma Ham,味道比普遍用的蜜瓜清新得多;又例如紅蝦薄片上的sauce,用了中式腐乳來提鮮,是非常新穎大膽的巧思。
除了精緻漂亮美味外,竟然還有一道超有趣的打卡菜式,就是煙燻三文魚。那些蘋果木的煙全被罩在玻璃球內,上桌時才由店員即席打開,那些香噴噴的蘋果木香味立即飄散出來,未入口已經先陶醉。而且在慢煮的三文魚上鋪滿魚子醬,真是超級豪華的一道頭盤。
我和Jan老師吃吃喝喝笑笑談談,竟然未到主菜已經半飽。幸好我選了馬賽海鮮湯,感覺沒有肉類般厚重。不過這個湯的製作過程真是非常繁複,聽店員說為了做這個湯,湯底用上了三種空運過來的法國魚類來熬製,絕對是誠意之作。
開始時我因為怕肥,不敢加入特地附上的蛋黃醬,單喝已經覺得很美味。不過法國菜的sauce是例無虛發的,沒理由不試試整體效果吧。輕輕加了一點和湯混合好,喝了一口之後簡直驚為天人!!味道即時變得鮮活立體起來。我最後也決定放棄減肥的念頭,狠狠將所有蛋黃醬都放進湯裏,簡直一百萬個大滿足。
最後是甜品的時候了。沒想到是竟然是Mille feuille! 這個甜點完全勾起我學師時的辛勞回憶,要將這塊皮摺得好,真是非常非常困難。這晚的酥皮超級脆,帶一點點焦糖香,真是上品。而酥皮上那漂亮粉紅色的朱古力是ruby chocolate,是一種和raspberry同時種植的可可豆,在生長過程中染出來的天然粉紅色,日本人對它非常趨之若鶩。不過吃下去和普通朱古力味道沒差太遠,是浪漫的生長過程才令它變得矜貴吧。
疫情至今很難得外出吃飯,許久沒有放鬆心情出來和好友吃頓晚飯,這一餐法國菜實在很愜意。助教先生果然很有功架,只可惜當年日日被Chef鞭策,未能分心多多請教。真有點遺憾。
執筆之際回憶著這些美食,總覺意猶未盡,希望不久將來能夠偷空,可以再過來吃個快閃午餐吧。

金銀花紓緩主婦手
春夏天氣潮濕,容易令皮膚敏感、濕疹、主婦手等皮膚問題發作,處理家頭細務的媽媽經常接觸水濕,濕邪入侵肌膚,造成痕癢、紅腫、老化等類似濕疹、過敏性皮膚炎的症狀,中醫理論視主婦手為「濕毒浸淫皸裂」的情況,為濕毒之邪鬱於皮膚所致,伴隨症狀為口乾、怕熱、小便偏黃等,宜清熱除濕、解毒止癢,涼茶中常用到的金銀花,屬性偏涼,有清熱解暑、疏散風熱、抗炎的功效,既可內服亦可外敷,有助紓緩主婦手痕癢症狀。平日打邊爐或燒烤後,亦可以金銀花加幾朵菊花煮成銀菊露,有助清熱解毒。
金銀花 — 性涼,有清熱解暑、疏散風熱、抗炎等功效,適合炎夏酷暑引致的頭暈、口乾、多汗煩悶、中暑者食用;適合各種炎性感染、潰瘍等症狀。由於性涼,脾胃虛寒、腹瀉便溏者勿食。注意蠶豆症 (G6PD缺乏症) 患者禁止使用 。
紓緩主婦手茶療:金銀花土茯苓茶
內服:
功效:清熱袪濕止癢,紓緩主婦手皮膚泛紅、滲水、痕癢的問題。
材料:金銀花、土茯苓、連翹、甘草各10克
做法:材料洗淨,800毫升水及材料以武火煮至水滾後調文火煮30分鐘,把茶連渣倒進保溫瓶即可。此茶能反覆沖泡至味淡,建議一星期飲用2-3天,連續兩星期為一個療程。
外洗:
做法:茶療放涼後以薄毛巾(紗巾)或化妝棉沾取藥,輕輕沾濕患處,不建議將藥棉長時間敷在患處,沾濕再自然乾即可。有需要時使用,每天3次,用後毋須沖洗。每天煮新鮮的用來外敷,花水可倒進保溫瓶保溫使用。
注意:請先用小量皮膚看看會否過敏。

Consume honeysuckle to relieve ’housewife's hand’
The weather during spring and summer is humid, and a humid environment can easily cause skin allergy, eczema, and ‘housewife’s hand’. Stay-home mothers, who have endless house chores to deal with, are always in contact with water. This causes the dampness pathogen to invade through our skin, causing our skin to itch, swell, and age. These symptoms are similar to eczema and atopic dermatitis.
Chinese Medicine theories view ‘housewife’s hand’ as the outcome of the dampness pathogen’s invasion. Other accompanying symptoms include dry mouth, aversion to heat, and yellowish urine. It would be best to clear the heat and dampness from our body and get rid of toxins to prevent itching from getting worse.
Honeysuckle, which is often used in herbal tea, is cool in nature. It can clear the summer heat, dispel wind and heat from the body, and is anti-inflammatory. Other than being a topical medicine, it is also an edible ingredient. One can consume honeysuckle to relieve itchiness caused by ‘housewife’s hand’. When you are planning to eat hotpot or barbecue, consider making a drink with honeysuckle and chrysanthemum. These ingredients can help clear heat and eliminate toxins from the body.
Honeysuckle – cool in nature; can clear summer heat, dispel cold and heat, and is anti-inflammatory. It is suitable to relieve summer-related conditions such as dizziness, dry mouth, excessive sweating, irritability, and heatstroke. It is also suitable to treat infection caused by inflammation and ulcer.
Since it is cool in nature, individuals with a cold and weak stomach and spleen as well as those who experience diarrhea should avoid. People with G6PD deficiency (Glucose-6-Phosphate Dehydrogenase deficiency) should avoid consuming this ingredient as well.
Tea remedy to 'housewives hands': Honeysuckle tea with smilax
For consumption:
Effects: Clears heat, dispels dampness and relieves itchy skin. Relieves redness, seepage and itchiness problem due to housewives hands.
Ingredients: Honeysuckle, smilax, forsythia, liquorice 10g for each
Preparation: Rinse all ingredients. Combine all ingredients with 800ml of water and cook on high heat until boiling. Turn to low heat and simmer for 30 minutes. Pour all contents into a thermos and tea can be re-brewed until flavor weakens. For best results, drink consecutively for 2-3 days. Two weeks for a treatment.
External rinse:
Preparation: Wait until the tea cools down. Use a thin towel or cotton pad to soak up medicine and gently pat on the affected area. We don’t recommend applying medicated cotton on area for long periods of time. Simply damp the area and let it air dry. Do this three times daily and it is not necessary to rinse after. Use as needed. Cook a new batch of medicated water daily to use externally.
Note: use it on a small area first to ensure there is no allergic reaction.

In this video, I went back to Neo’s Kitchen to personally whip up and DEMOLISH a 4kg batch of Ram-don from the movie Parasite! For my version of ramdon, I added kimchi and used striploin steak, garnished with spring onions. After an arduous hour long cooking process, I completed the platter in just under 30 minutes. Despite being largely instant noodles, the ramdon was unexpectedly delicious and the additions complemented it well.

This is a basic chicken broth that you can easily make and stash it in your freezer so that you can use it any time you want. Instead of using chicken bones, Roland found chicken feet can make much more flavourful broth for your dishes. You can use this broth for your hot pot chicken soup base, chicken stock for your soup or any other dishes. If you are making a big batch of chicken stock ahead in time, consider freezing them in different volume i.e. 500ml for your soupy dishes or pour them in an ice cube tray so that you can use them in small amount.

Ingredients:
Makes about 1.5L of chicken stock
1 stalk of spring onion
1 bulb of garlic - skin on
1 tablespoon of white peppercorn
1kg of chicken feet
1.5L of water (for pressure cooking) (If you're cooking this over the stove, use 1.75L of water as some of the water will evaporate - apologise that Roland said 1.45L in the video)
Pressure cook for about 30 mins. For stove top cooking, bring the water to a boil then simmer for 45 mins to an hour.
