由香港迪士尼行政西廚麥錦駒師傅帶領嘅廚師團隊,每日都會花時間同心機將剩食轉化為好味嘅餸菜,捐到社區俾有需要人士,貫徹度假區愛地球同關愛社區嘅宗旨。今日係世界糧食日,幾位本地大學生就特別製作咗一條短片提吓大家要珍惜食物。睇完片仲可以跟住呢個食譜試下整麥師傅喺片中嘅得獎菜式!
「雜菜魚湯伴魚餅」
1. 清洗魚骨,加入凍水,以慢火煮約20分鐘。撈起魚骨,魚湯備用。
2. 將生菜、白菜、西蘭花切成條狀,加入魚湯。
3. 加入忌廉,以慢火煮至雜菜軟身,然後調味。
4. 開始準備魚餅,先將魚肉、洋蔥頭、甜椒頭、麵包皮切粒。
5. 加入芫茜、青蔥頭、蛋黃醬攪拌。
6. 放入攝氏190度焗爐焗約20分鐘即成。
Led by Mak Kam-kui, our executive sous chef of Western Cuisine, HKDL’s entire team of chefs has shown their love for the Earth and our community by transforming surplus food into delicious dishes that are donated to people in need every day. Since today is World Food Day, several university students have come together to create a short video advocating food conservation. You can also try making Chef Mak’s dish from the video using the following recipe:
“Fish Stew Served with Fish Cakes”
1. Clean a fish bone. Put it into cold water and cook it for 20 minutes over low heat. Take out the fish bone.
2. Cut broccoli stalks, cabbage and lettuce into strips. Put them into the fish soup.
3. Add cream and cook the soup over low heat until the vegetables are softened. Season the soup with salt.
4. Prepare fish cakes by mixing chopped fish meat, onion, sweet peppers and bread crust into pieces.
5. Add parsley, green onion, mayonnaise and mix it together.
6. Bake the fish cakes at 190 degrees Celsius for about 20 minutes. The dish is now ready!
