Toa Payoh Hwa Heng Beef Noodle was known as Odeon Beef Kway Teow in the 1970s, as it sat across from the now-defunct Odeon cinema at North Bridge Road. Since then, the stall has relocated a few times, and they are in Bendemeer Market Food Centre.
The dry version of their Beef Noodle looked absolutely mouthwatering. The al dente and springy thick bee hoon was topped with a generous amount of thin beef slices, before being smothered in an dark gravy. The gravy is infused with spices, herbs, as well as a bit of starch, which acted as a thickening agent.
The bright red chilli sauce sauce had a tantalising, acidic tang which lifted the flavours of the dish. It also contained a bit of chincalok (fermented shrimp), which really added umami to the soup and noodles. It really is a must-have accompaniment!

You might have tried Mapo Tofu before but have you tried switching up tofu and use tanghoon instead? Although Roland used Korean vermicelli in this recipe, you can use glass vermicelli too - depending on what you prefer or what you can get. In case you haven't tried mapo tofu before, it taste a little like mala tofu -- so technically this dish is like mala tanghoon or glass vermicelli.
This recipe is very easy to execute and as you can see from our photo of the dish, it looks rather presentable too. We've recently cooked this as a standalone carbo dish as part of our home-cooked buffet and our guests love it.
If you like to try this recipe, see the ingredient list below for your easy reference.
We would like to give special thanks to La Gourmet for letting us try out their high quality cast iron wok in the video respectively. If you like to buy it, you can go to any of the major departmental stores in Singapore such as Isetan, Robinsons, Takashimaya, BHG, OG, Metro or Tangs. These two brands are also available in most major departmental stores in Malaysia. La Gourmet products are also sold in Philippines and Indonesia.
Hope you can recreate this yummy dish in the comfort of your home. Thanks for dropping by our channel.

This is one of our must-order dishes whenever we dine at a Thai restaurant. After learning how to cook this from Roland, I'm not so sure if I will still order this dish at all because it's SO EASY to make and it's equally yummy with this recipe. You must must must must try this. This is a really simple recipe, I know I say that all the time but THIS IS REALLY SIMPLE. Really!!
