每次來Tate吃飯，味覺與視覺享受均十分愉悅。這位亞洲目前唯一一位的米二星女主廚Vicky Lau，當廚師之前在紐約當平面設計師，對於美感的觸覺比起許多廚師更為敏銳，執行方面當然也是專業級別。從食器採用、擺盤和構圖都有細致到位的連貫性、和諧感，自然流露出個人風格。
大量用上不同款式的白瓷碟是她的特色，這些「白色背景」成了她菜式的布景，讓她在上面進行美食創作。這些白瓷碟很常重覆使用，例如從圖4-8, 便在不同菜單裡出過場，但因為每一次菜式內容、擺盤和構圖方式不同，即便用的是同一個碟，都會帶來新鮮感。可見一個廚師知道自己要表達什麼很重要，Vicky Lau是少數不是被食器駕馭，而是有能力駕馭食器的廚師。就好似「人穿衣，又或是衣穿人」的道理一樣。
