I never tot I was gonna get a fair bit emotional on a recipe. Both my parents have some sort of Indian influence or mixture. Mom’s granddad is from Pondi Cherry. Mom has been sharing how her granddad was the one who trained her in her curry making. My Papa loved my moms curry. As a little boy we would have this dish at least 2 or 3 times in a week. And the remaining gravy would be kept in the fridge as for breakfast the spicy, sour fragrant gravy goes extremely well with toast and butter. There’s this special fragrant and comforting taste to moms curry. Mom says the secret is to “Tumis” or to gentle fry the spices before adding in the liquids .
A very vivid memory of sambal belacan, white rice and curry would easily jog me to a little 2 room flat in Taman Tun Aminah, Johor. Where mom would make me intricate lunchbox meals and life was so much simpler then. It was just papa, mom and me. This dish is also so very popular during family gatherings. This dish reminds me of happiness, this dish reminds me of family. I can’t understand why it took me this long to learn this dish. As I was cooking this dish there was an internal conflict. I wanted to learn this taste, this heritage and keep it going. At the same time I didn’t want to perfect this taste as I scare the day would come where I’ll loose that comforting taste. So today I’m sharing a part of my family with you. Today I cooking “Meen Curry” or fish curry.

When you leave your home, wear gloves—winter mittens or outdoor gloves—and keep them on in subways, buses, and public spaces.

If you are in a social situation where you should remove your gloves, perhaps to shake hands or dine, do not touch your face or eyes, no matter how much something itches. Keep your hands away from contact with your face. And before you put your gloves back on, wash your hands thoroughly with soap and warm water, scrubbing the fingers. Put your gloves on.

I rarely wear a face mask in an epidemic, and I have been in more than 30 outbreaks.

Don’t shake hands or hug people—politely beg off, saying it’s better for both of you not to come in close contact during an epidemic.

Inside your household, remove all of the towels from your bathrooms and kitchen immediately, and replace them with clean towels that have the names of each family member on them. Instruct everybody in your home to only use their own towels and never touch another family member’s. Wash all towels twice a week. Damp towels provide terrific homes for viruses, like common colds, flus, and, yes, coronaviruses.

If anybody in your home takes sick, wash your doorknobs regularly. Similarly, be cautious with stairway banisters, desktops, cell phones, toys, laptops—any objects that are hand-held.

Place serving spoons in each dish and instruct everybody at the table to scoop what they want from the serving dishes onto their personal plates or bowls, return the serving spoon to the main dish, and then use their personal chopsticks only to pick food from their personal plate or bowl into their mouth.

Wear long-sleeved shirts and clothing that covers your body when you are caring for your ailing friend or relative. Clean everything your patient wears or touches very thoroughly in hot soapy water, including sheets, towels, and utensils.

But with these simple precautions, if taken by everybody in your household, building, office, and school, you will dramatically reduce the spread of the virus and bring the outbreak to its knees. Be safe. Do not panic.

Pink Smoked Salmon and Avocado Sushi Rolls
Difficulty: Easy
Time: 30min
Number of servings: 2 rolls (12〜16 pieces)
Ingredients:
300g (10.6oz.) cooked Japanese rice (short-grain rice)
A
* 1&1/2 tbsp. vinegar
* 1/2 tbsp. sugar
* 1/2 tsp. salt
85g (3oz.) pink smoked salmon
1/2 avocado
80g (2.8oz.) crab meat
B
* 1 tbsp. mayonnaise
* salt and pepper
2 Nori sheets
Sakura Denbu (pink colored seasoned shredded codfish)
black toasted sesame seeds
soy sauce
Wasabi (Japanese Horseradish Paste) if desired
Directions:
1. Place cooked Japanese rice in a bowl. Add A (Sushi vinegar) while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
2. Season the crab meat with B. Cut smoked salmon and avocado in strips.
3. Cover a bamboo sushi-roll mat with plastic wrap. Place Nori sheet on the bamboo sushi-roll mat, shiny side down.
4. Spread the sushi rice on the Nori sheet using your finger tips, little bit moistened with water. Sprinkle with Sakura Denbu and black toasted sesame seeds. Flip it over so that the Nori sheet facing you.
5. Place avocado, crab meat, and smoked salmon lengthwise on the Nori sheet. (cut them if too long.)
6. Roll the bamboo mat forward, hold the line of ingredients firmly with your fingers, stop and leave about 1/3 inch of sushi rice, make sure all the ingredients are pressed in, roll it completely, gently press the mat around the roll to shape it (do not squeeze).
7. With a moistened knife (bread knife cuts well) cut the roll into 6-8 pieces (re-wet as needed. don't push but pull to cut).
8. Serve with soy sauce and Wasabi if desired.

This sushi roll is perfect for people who don't like raw fish :)
Ikura (salmon roe) is salty enough that you don't need soy sauce to eat.
Very handy recipe for parties!

Christmas Tree Alaska Rolls (Cooked Salmon and Avocado)
Difficulty: Medium
Time: 30min
Number of servings: 2 rolls (12 pieces)
Ingredients:
330g (11.7oz.) cooked Japanese rice (short-grain rice)
2 tbsp. Sushi vinegar*
Aonori (green laver)
white toasted sesame seeds
1 filet (100g=3.5oz.) salmon
A
* 1 tbsp. mayonnaise
* 1/2 tsp. Wasabi (Japanese Horseradish Paste) if desired
1/2 avocado
2 Nori sheets
Ikura (salmon roe)
star-shaped cheddar cheese if desired
Directions:
1. Place cooked Japanese rice in a bowl. Add Sushi vinegar while the rice is hot and slice through rice using rice paddle to separate the grains. (Cool the rice before you use.)
2. Season the salmon with salt and pepper. Heat a thin layer of cooking oil in a non-stick frying pan over medium-low heat. Place the salmon, cover, and cook for 2 minutes. Flip it over, cover, and cook for another 2 minutes. Stop the heat, then leave to cool in the pan. *You can grill, bake in the oven at 200C (392F) for about 10 minutes, or microwave at 500w (medium) for about 2 minutes.
3. Cut avocado into 4 strips.
4. Remove bones and skin of salmon if any. Then break it into pieces in a bowl. Then toss with A.
5. Cover a bamboo sushi-roll mat with plastic wrap. Place Nori sheet on the bamboo sushi-roll mat, shiny side down. Spread 1/2 of the sushi rice on Nori sheet using your finger tips, little bit moistened with water. Sprinkle with Aonori (green laver) and white toasted sesame seeds. Flip it over so that the Nori sheet facing you.
6. Place avocado and the salmon mixture lengthwise on the Nori sheet.
7. Roll the bamboo mat forward, hold the line of ingredients firmly with your fingers, make sure all the ingredients are pressed in, roll it completely, then gently press the mat around the roll to shape it (do not squeeze).
8. With a moistened knife (bread knife cuts well) cut off both ends, then cut the roll into 6 pieces (re-wet as needed. don't push but pull to cut).
9. Pile up the sushi rolls like a Christmas tree on a dish, sprinkle with Ikura (salmon roe), garnish with some star-shaped cheddar cheese if desired.
* Ingredients to make sushi vinegar from scratch.

1/2 tsp. salt

How to Make My Melody Bento Lunch Box

((Sauteed Shimeji Mushrooms and Peppers with Shio-Kombu))
60g (2.1oz.) red pepper
60g (2.1oz.) yellow pepper
60g (2.1oz.) orange pepper
200g (7oz.) Shimeji mushrooms
20g (0.7oz.) Shio-Kombu (salted kelp)
1 tbsp. sesame oil
((Simmered Potato Pork Roll))

1/2 tsp. Yamaki Kappo Shirodashi (White Dashi)
((My Melody Onigiri Rice Ball))
cooked white Japanese rice
sliced ham
Nori Sheet
sliced cheese
sliced cheddar cheese

cooked broccoli

Directions:
((Sauteed Shimeji Mushrooms and Peppers with Shio-Kombu))
1. Remove tough base of Shimeji mushrooms and break into pieces. Slice the peppers.
2. Heat sesame oil in a frying pan and saute the Shimeji mushrooms and the peppers.
3. Cook until softened and season with Shio-Kombu.

((Fish Sausage Strawberries))
1. Slice fish sausage and cut into a strawberry shape with a design knife.
2. Cut and make zigzag Edamame halves for the strawberry hulls.
3. Attach the Edamame hulls to the fish sausage strawberries with bits of spaghetti pasta. (pasta will absorb moisture from fish sausage and gets soft after few hours, so you can eat it by lunchtime!)
4. Arrange some black sesame seeds for strawberry seeds with tweezers.
((Usuyaki Tamago Egg Crepe Flowers))
1. Beat an egg in a bowl and season with Yamaki Kappo Shirodashi (a bit of salt and sugar is fine).
2. Heat cooking oil in a tamagoyaki nabe (rectangular omelet pan) on low heat, pour the egg mixture in the pan and spread over the surface.
3. Cook the egg until the edges begin to dry, then flip it over and cook the other side for about 10 seconds. Leave it to cool completely.
4. Cut the egg lengthwise, fold in half lengthwise, and make vertical slices on the folded side.
5. Roll up the egg and attach it with a bit of spaghetti pasta.
((My Melody Onigiri Rice Ball))
1. With a permanent marker (Sharpie), trace your favorite My Melody illustration on the parchment paper and cut it out.
2. Pile up some steamed rice, cover with plastic wrap, place the My Melody stencil, and shape it with your fingers. Pinch and create chiseled jaw, because you want to draw a clear outline where you don't put the ham on top.
3. Place the My Melody stencil on a slice of ham and wrap with plastic wrap. Cut out the hood and the folded ear with eyebrow scissors.
4. Use the Character Nori Punch to cut out eyes and mouth. (you can also use eyebrow scissors)
5. Cut out and place the My Melody's flower hair accessory stencil on a slice of cheese. Use a design knife or a toothpick to cut carefully around the stencil. Cut out a slice of cheddar cheese to make a core of the flower and a nose.
6. Place the side dishes and the rice in a bento box. Then arrange the parts with tweezers.
