佢地用既食材都係非常新鮮,素芝士完全唔膩,
配搭黑醋醃製過既珍珠,食落特別甘香;
而蕃茄額外增添一份清甜感,作為前菜
認真唔錯。

▫ 當然要必試菇王之王之稱既「麻辣繡球菌·
萵荀絲」啦,呢種菌本身味道唔算突出,
所以配搭麻辣就最好不過;加埋口感爽脆既
萵荀絲,兩者一拍即合,惹味得黎絕對
令人一試難忘。

▪ Wild · Mushrooms Soup -
▫ 呢個「特濃·蘑菇湯」認真重量級,一入口
已經感受到相當濃郁既蘑菇香,完全唔需要
額外調味;旁邊有一小塊多士比你點一點湯底,
食落淡而無味既麵包瞬即充滿口感,正!

▫ 平時較少食素既我都係第一試呢個「雞油菌·
竹笙素翅」,就咁睇賣相同真翅感覺好似,
成個個素翅認真足料,雞油菌鹹香到位,
加上竹笙啖啖滋味有咬口,值得一試。

▫ 幾何亂真既「玫瑰·叉燒」,話明素叉燒就
當然唔係真係肉啦,其實係由大豆麵筋製成,
食落味道同口感同真叉燒無乜分別。另一樣
要讚既係個有機玫瑰果醬,令整體感覺完全不膩。

▫ 對腸胃甚有益處既「藥膳雞頭米·薏米百合·
浸時蔬」作為主菜認真夠睇頭,底層鋪滿

清新健康,口感增添不少。

係我最鍾意,事關大廚將牛肝菌加入XO醬

醬汁既精華,帶少少辣勁得黎特別好食,夠哂惹味!

控制火侯相當出色,將裡面既燕麥奶炸得岩岩好;

2021 新春套餐 @ Eastern & Oriental Hotel
今年的农历新年与以往不同,大家都必须遵守各国政府定制的标准作业程序,百年一遇的疫情就在这个年代碰巧被我们遇上了。
距离农历新年不远了,位于槟城的百年酒店 Eastern & Oriental Hotel 推出了新春套餐,酒店严格遵循SOP,虽然套餐是以传统的“围桌共食”,但是却以一人一碟的方式呈上,避免用餐时交叉感染。
E&O 共推出了三种新春套餐,还有一个CNY Goodie TakeAway 菜单。套餐如下:

Japanese Shark Fin Sushi 鮫 フカヒレのにぎり 🦈. I don't normally eat any Shark Fin because you don't know the Sourcing, Sharks genetics & there's all these illegal poaching & dumping, Endangering some species. In Cantonese cuisine, we actually use small shark bones or meat for cooking behind the scene, so the whole carcass can be consumed, but greedy high end Shark Fin users created an imbalance.. These Japanese Shark Fin however are sustainably farmed in 気仙沼 in 宮城 Miyagi, historically famous for Shark Specialties 🇯🇵 . In fact, one pretty legit piece of History indicates that the Chinese habit of eating Dried Shark Fins as a high end banquet dish, actually started from Japan supplying them via Nagasaki trading ports in the 1600's. 🤔 Except Japan side made this a more responsible, long term sustainable trade.. 😅

วันนี้เอาใจเพื่อนๆที่ Enjoy Eating เหมือนนีน่าค่ะ ขออนุญาตนอกเรื่อง beauty นิดนึงมาพูดถึง 10 ร้านอาหารที่นีน่าชอบไปทานมากที่สุด ทั้ง 10 ร้านไปทานเอง จ่ายตังค์เอง no sponsor ใดๆ รวบรวมเอามาไว้ทั้งอาหารไทย ญี่ปุ่น จีน ฝรั่ง อิตาเลียน เวียดนาม และอื่นๆ รวมไว้ตั้งแต่ราคาถูกสุดถึงแพงสุด บางร้านเป็นร้านที่นีน่าเชื่อว่าหลายๆท่านอาจยังไม่รู้จัก อยากแนะนำให้ลองไปทาน เพราะทั้งหมดที่รวบรวมมาให้ นีน่าว่าเด็ดจริง และชวนใครไปทานด้วยก็พูดเป็นเสียงเดียวกันว่า "อร่อยมากกกก"

We love this recipe because it tastes just like Sharks fin soup and yet no sharks were harmed. Cook this yummy soup instead of Shark Fin Soup and the earth will thank you. This fish maw & seafood soup is an excellent dish to be added on your reunion dinner menu. Both fish maw and sea cucumber absorb the flavours of aromatics and sauces very well, making them perfect to be added in soups or gravy based dishes.
Fish maw is dried fish air bladder. Rated as one of the precious Chinese ingredients along with abalone & sea cucumber, fish maw is very nutritious and is also full of collagen. Best of all, it’s free of cholesterol. Many Chinese believe that consuming fish maw will help improve their complexion.
Despite its name, sea cucumber is actually not a plant. They are marine animals and are found on the sea floor worldwide. Although the Chinese has long considered sea cucumber as a delicacy, it is only in the recent years that science has validated their health benefits effects. Sea cucumber has shown therapeutic values such as wound healing and anti-cancer.

Ingredients:
Serves 8
1.5 litre of chicken stock
25 g of fish maw (before soaking)
1.5 pieces of sea cucumber
200 g of crab meat
1.5 tablespoons of oyster sauce
175 g of prawns - de-shelled & de-veined
Thicken the soup up with potato starch solution (you can mix 2 teaspoons of potato starch with just enough water to dissolve them)
2 beaten egg
